Penne with Vegetable Bolognese Sauce

Frannie made delicious vegan Penne with Vegetable Bolognese Sauce! It was incredibly rich and delightful. She used tofutti instead of marscapone and vegan rella in lieu of mozzarella.

Amazing.

The recipe is from Food Network.

My computer is acting up but i am going to leave you a message here regarding a few of your posts, Jenny!

Before i write about your posts here i want to thank you for your compassion, care and concern about and for Mattie. She's doing better, but we are not quite out of the woods. She's such a trouper... i really appreciate your taking the time to send good thoughts her way...

OK, onto your blog posts of late!

First of all, this pasta looks incredible. Seriously great. Who needs the cream sauce and the cheese? This version is better for everyone and everything!

Your dog... what a face there! That's a great photograph. Love when the head of a dog looks so huge like that.

You had some craaaaazy weather there. We've had a few quickie hailstorms here in So Cal, and they always freak the natives out! Cracks me up. i grew up in Illinois so i know of 'em and i also know to try to stay out of their way 'cause they HURT! Glad you got inside in time... they end as quick as they start and it's like you wrote, "WHAT THE HAIL JUST HAPPENED HERE?!"

Mmmmmmmmmmmm... hot chocolate!

i want to see Michael Moore's movie... saw "A Mighty Heart" a few weeks ago (media preview) and that was a toughie. Methinks this MM one will be tough but good. i can't see the videos you link to but i'll check 'em out sometime this weekend and thank you in advance.

Love the restaurant that had that red pepper/portabello/sun dried tomato/spinach sandwich. Like my fave veggie combo 'wich of all time! That photo of you eating the veggies is adorable. YOU are adorable! Great shot. Your happiness shines through...

You took me back to 8th grade with your visit to Washington and all the monuments and statues. So much great history there... it's been many MANY years since 8th grade (since college, too, but i digress!) and i don't know if that Korean War Memorial would have scared the crud out of me as a kid but it sure is eerie, you are right. Kinda creepy... but important to our country's history, without a doubt, Jenny. Thanks for all the cool photos of D.C.

Your garden is sweet. Cute, quaint. And nice herb garden on the porch there. Love the green!!

Oooooooooooh... the foot scrub. Wasn't that a great idea by U.V. with the facial scrub? Yours looks deliciously divine. My feet could use this. i must borrow my parents' Epsom salt!

Good Girl DOES look like a lioness... an ebony lioness inded. Very royal and beautiful... how strange a dog with a mane... i remember my Golden retriever we had when i was a kid had kind of the mane thing goin' on... "The Mane Event"?!

The pesto pasta is gorgeous. Nice heaping topping of Rella! Sweet. And mmmmmmmmmmmmmmmmmm... pizza!!! Oh only my FAVE there. Looks so good, Jenny!

I really enjoyed scrolling through your past posts! (much like Kleo) Your dog is so cute, I love that expression. and to me, there is nothing more exciting than a powerful storm like that. a foot rub is what I really need - it's great how we're all inspired by the other! :)
