I HATE fresh coconut - to me, nothing ruins a dessert more than fresh or shredded coconut - ugh.



However, recently I've come to realize the culinary genius of coconut milk!

I'm obsessed.

I've made:

Curried Vegetables (from How it all Vegan)
Coconut French Toast
Sweetened-Condensed Coconut Milk Syrup
and Sweet Sticky Rice
