Vegetable Medly

This is one of my favorite meals, I've named it Vegetable Medly.





I also tried to make garlic bread, but forgot it was in the oven!










Recipes:

Vegetable Medly
4 quarts mixed vegetables
5 red potatoes, cubed
2 sweet potatoes, cubed
1 small onion, chopped
1 Tb olive oil
1 block firm tofu, cubed
1 box pie crust mix
2 packets Road's End Organics Gravy, prepared
Salt/Pepper to taste

In a small saucepan, sautee onion with olive oil, set aside.

Mix box of pie crust mix according to directions. Roll crust into 6 inch long "snakes" and slice into small dumplings. Set aside.

In a 10 quart saucepan/steamer, steam vegetables, stagger them according to cook time. (For example, start with potatoes and end with kale). With 15 minutes remaining, add tofu and dumplings.

Remove from steamer, top with gravy, add salt and pepper to taste.

Vegetable Suggestions: Broccoli, Green Beans, Asparagus, Zucchini, Squash, Cabbage, Kale, Collard Greens, Carrots, Celery, Etc.

Garlic Bread
1/3 cup margarine
2 cloves garlic, minced
1 tsp salt
8 peices panini, sliced in half

Mix margarine with garlic and salt, let stand for 10-15 minutes. Spread on bread halves. Broil for 3 minutes or until golden.
Don't forget it's in the oven!!

Dessert:
I know that serving oreos as dessert is a total cop-out, but double stuffed and chocolate cookies were just impossible to pass up!

Have you ever had Nature's Path? They make "oreo's" but vegan (and better). Newman's Own has some but I don't care for them. I could eat a whole bag of chocolate mint any day.

I've never tried Nature's Path, I'll have to look for them...Whole Foods has their own brand that are pretty good (no trans-fat). These are actually Wegman's brand. I can often find actual Oreos with the vegan ingredients, the peanut butter are my favorite!
