Raw Experiment #1
A friend of mine is visiting and he eats a primarily raw diet. Inspired, I decided to make a raw meal for dinner one night.
One of the dishes was originally called "Mock Meat Loaf" but it truly could not be farther from meat-loaf-like so I renamed it "Raw Spring Roll".
The bowl of ingredients mixed together after they had been grated in my food processor.
On my fork...
The beets turned my hands red!
Recipe:
Spring Roll Salad
1 beet, grated
2 sweet potatoes, grated
2 red potatoes, grated and sprinkled with lemon juice
1 red onion, chopped
3 celery stalks, with leaves, chopped
1 pound raw peanuts, ground in the food processor
Put each item in a food processor indivdually. When each item is processed, place in a large bowl. Mix together and refrigerate overnight.

Wow. Look at your hand! As red as your fingernails. Seems like 'twas an interesting experiment, Jenny! i'm not a big fan of beets, mostly because i have some odd childhood memories of weird beet borscht that was funky tasting...
"Just beet it!"

Raw is the new vegan. I just can't wait for the Earth Crisis equivalent.
